Consome is a popular soup in Mexico often served in small cups with street tacos, or in big bowls. While Consome is more of a broth, it is rich and filling and can be served with tortillas, onions, and cilantro.

  1. Prep Meat and Vegetables: Wash your chicken and pull any remaining feathers. Wash your onion, carrots, squash, corn, garlic, cilantro, and chayote.
  2. Create Your Broth: Bring a large pot of lightly salted water to a boil. Add chicken, onions, garlic, cilantro and simmer for an hour.
  3. Add Your Vegetables: Add carrots, squash, corn, chayote and cook for another hour or until ready. There will be evaporation in this process so add water as needed.
  4. Prep Garnish and Serve: Chop onions & cilantro and serve with warm tortillas.
