Slow cooked pork tacos are a favorite of ours. Whether it’s al pastor or just regular sortido tacos, we love our pork tacos slow cooked and served with onions, cilantro, limes a accompanied with a few different salsas. This is tasty recipe and while it takes a while, it’s pretty easy.
This recipe is a “think ahead” meal:
But if you prepare and begin cooking the meat the night before, the next day the only tasks will be making fresh salsas and cutting garnish.
This carnitas recipe is so simple:
Take some pork and literally slow cook it in lime and orange juice, a little coca-cola, salt, pepper, cumin, and some bay leaves. It cooks on low all night.
The next day you get to enjoy yourself with your community:
Start a fire, turn your music on, and heat a pan up. If you are cooking indoors you can always use a stovetop as well. Pan fry and chop the pork up. If you want you can also shred it first, add some fluid it has cooked in all night, and then cook it down until it becomes crispy.
Cook time is fast so you want to have your onions, cilantro, and limes cut, and the salsas ready to go in bowls.
Heat your tortillas up and serve with only the meat portions so that people can garnish and flavor their tacos as they like them.
Directions
0/0 steps made- Prep Meat and Vegetables: Wash the pork and dry it off. Slice into smaller chunks and place into a pot. Add salt, cumin, and bay leaves. Add sliced onion and garlic. Squeeze 2 oranges and three limes over the meat. Pour the coke over the meat and place on low heat for 8-10 hours.
- Chop the Meat: Remove the meat when it has cooked down and is falling apart. Throw it onto a hot lightly oiled pan and fry until all sides are browned. Chop the meat down to taco size and set aside.
- Preparing the Tacos: Chop onions & cilantro and serve with warm tortillas and your favorite salsa. The salsa is this photo is one version of Salsa Verde Taquera. This taco can and should be served with a couple different salsas. Here are a few salsas that we love to make that you can try.
