Welcome. We hope you enjoy these recipes. They got us through some tough months when Covid was first breaking out in Mexico. Some of these recipes would be prepared and cooked on work locations. Others meals would be made over the span of a day and enjoyed with friends and family.
One thing to get out of the way real quick is that we are not chefs. You may have different flavors or techniques you use. Let us know how you cook your recipes.
Most of these meals on this site were cooked in Morelos, Mexico and are made from authentic recipes using locally accessible food and spices that are staples in the Mexican cuisine here. (tomatillos, tomatoes, onions, cilantro, avocado, chilis, fresh peppers, cumin, Mexican oregano)
We made this site to show the practicality of cooking over the fire and is intended to be a quick go to for anyone wanting to make some great Mexican food.
One thing to keep in mind. There is no one recipe for any meal here. Season and spice to your taste. Add or reduce amount of chilis and peppers to your desired heat. We may like it hotter or cooler than you like.
Some of these meals can be made on the fly and others are meant to made all day. Enjoy cooking these recipes and the people you cook them with!
